Melt 3 tablespoons of butter in a large, deep pot. Once melted, add 1/3 cup brown sugar, 1/4 tsp. vanilla extract, 1 tsp. cinnamon. Turn up the heat to high, if not already. Drop in a kernel and once it pops add anywhere from 1/2 cup (if you like it extra sweet) to 1 cup (if you like it lightly sweetened) of kernels. I usually add 3/4 cup to get it just right. Cover with a tight fitting lid, then once it starts popping, shake the pan back and forth vigorously until all kernels stop popping. Be careful not to burn! Sprinkle with some sea salt if so desired.
